Thanksgiving

These are some of our favorites and good references for doing our traditional Thanksgiving.

• We don’t brine (have tried it) and have never had any trouble getting a tender and moist turkey.  We shoot for 16-18 lbs
  • Here’s the way we do it.
• Sweet Potato Casserole
• Green Bean and Corn Bake
• Cranberry Sauces – I generally make these several days in advance to allow them to better gel the flavors
  • Cranberry Sauce with Pinot and Figs – Bobby Flay (Food Network)
  • Fresh Cranberry and Orange Relish – OceanSpray
• Mashed Potatoes
• Turkey stuffing
• Turkey gravy
• Pumpkin Rum Mousse (& Whipped Cream)

And then, the day after Thanksgiving.

• Turkey  Bone Stock – Emeril Lagasse – Food Network
  • Next year I think I’ll cover this after the 2 hours and cook another hour.
