This is a nice way to upgrade the typical steamed green beans.

Ingredients
- 1 pound fresh green beans
- 1 ½ ounces slivered almonds
- 2 tablespoons butter
- 2 cloves garlic, minced, or more to taste
- salt and ground black pepper to taste
Directions
- Couple of options here.
- Place beans into a microwave-safe casserole dish with enough water to cover the bottom. Microwave on high power until almost tender, 8 to 10 minutes.
- Place beans into steamer and steam until al dente.
- Drain in a colander and refresh under cold running water to keep them bright green in color.
- If almonds aren’t already toasted, heat a frying pan over medium heat. Add almonds and cook until just starting to turn golden, about 3 to 5 minutes, watching closely so as to not burn.
- Take pan off of heat and add butter to melt. Return to heat and add garlic. Heat 1-2 minutes until garlic if fragrant.
- Mix in green beans, season with salt and pepper, and continue to stir until heated through, 3 to 5 minutes.

History
- 2024-12-28 – Had to actually roast the almonds this time because I left the ones I had at Rosewood. Steamed the green beans again, rinsed in cold water and then completed the almondine about an hour later when I could get back into the kitchen. The were all gone by cleanup so I think this method works fine when you’re trying to finish vegetables at the last minute while other kitchen activities are underway.
- 2024-12-23 – Planning to serve these for Farm Christmas so tried then out tonight using the steamer method. Steamed about 10 minutes then completed almondine as usual. They were a very nice alternative to the basic steamed green beans we usually have.
