I’ve made something like a lamb hash to finish off a nice leg many times. Great use of leftovers and time to start following it better in order to improve it.
Note: Since the amount of leftover lamb will vary and can’t easily be increased, ingredient amounts are proportional rather than fixed.

Ingredients
- Lamb – Diced
- Potatoes – Diced
- Carrots – Diced
- Onion – Diced
- Butter or Olive oil – As appropriate based on other ingredients
Proportions
- Lamb : Potatoes – 1:1
- Carrots : Onions – 1:1
- Lamb/Potatoes : Carrots/Onions – 3:1
Directions
- Heat butter/oil in a cast iron skillet.
- Add any raw potatoes, carrots and onions and cook until softened
- Reduce heat, add lamb and bring to serving temperature.

History
- 2025-12-31 – Breakfast on NYE. Used the remaining lamb (20 oz) from our Christmas dinner. Added new carrots, onion and potatoes. It was tasty but was rather dry. Need to investigate how to improve that.
