This is the gravy Kathy makes while the turkey is resting. It’s gone through a few incarnations and all have turned out great!

Ingredients
- 4 tbsp butter
 - 1/4 cup (30g) flour
 - 2 1/2 cups turkey / chicken broth
 
Directions
- Pour drippings from turkey roasting pan into fat separator
 - Put roasting pay on cooktop (use 2 burners for more even heating)
 - Melt butter over medium heat in roasting pan
 - Whisk in flour and cook for about 1 minute
 - Gradually add in stock and bring to a boil
 - Reduce heat and whisk constantly until thickened, 15-20 minutes
 - Pour juices from turkey separator into gravy after it begins to thicken for additional flavor
 
Adjustments
- Can use fat from the fat separator instead of butter if you want
