Turkey Gravy

This is the gravy Kathy makes while the turkey is resting. It’s gone through a few incarnations and all have turned out great!

Ingredients

  • 4 tbsp butter
  • 1/4 cup (30g) flour
  • 2 1/2 cups turkey / chicken broth

Directions

  1. Pour drippings from turkey roasting pan into fat separator
  2. Put roasting pay on cooktop (use 2 burners for more even heating)
  3. Melt butter over medium heat in roasting pan
  4. Whisk in flour and cook for about 1 minute
  5. Gradually add in stock and bring to a boil
  6. Reduce heat and whisk constantly until thickened, 15-20 minutes
  7. Pour juices from turkey separator into gravy after it begins to thicken for additional flavor

Adjustments

  • Can use fat from the fat separator instead of butter if you want
