Use with as a good side dish for Mardi Gras menus

Ingredients
- 3 tablespoons cajun seasoning
- 1 (14 ounce) can diced tomatoes with juice
- 3⁄4 cup celery, diced
- 3⁄4 cup green onion, diced small
- 3⁄4 cup yellow onion, diced small
- 3⁄4 cup red bell pepper, diced small
- 2 cups white rice, raw
Directions
- Saute vegetables in butter over medium heat until soft.
- Add all other ingredients and stir well bring to a boil reduce the heat and cover.
- Turn heat to low for 25 minutes.

- 2024-02-13 – I may have over-thought this. It seemed like too little moisture for the amount of rice. So I put it on and checked / stirred every 5 minutes to make sure it wouldn’t stick. It didn’t but the rice didn’t get done either. I cooked it for another 25 minutes and added a little more water but the rice was still a bit al dente. I’ll probably try again and just let it sit to see if it works as described.
