Realized today that although I’ve made this countless times I’ve never included it in the recipe list. This is a delicious way to cook spinach. Granted it adds more calories than just using olive oil but they’re worth it.

Ingredients
- 3-4 strips bacon, sliced into thin pieces (I use 3 strips of thick sliced bacon)
- 1 medium onion, chopped
- 1 bell pepper, chopped (red, yellow or orange makes a better presentation and adds sweetness)
- 1-2 garlic cloves, chopped
Directions
- Place bacon in large stock pot and render (10 min)
- Add peppers & onions. Cook until softened (3-4 min)
- Add garlic and cook for additional minute
- Add spinach. Cook 1-2 minutes, stir and cook until desired texture
Adjustments
- Made without the pepper for a long time but found that adding it provides a bit of sweetness and color.
