Vanilla Ice Cream

February 16, 2024

This is a basic vanilla ice cream recipe provided in my Cuisinart instruction. I did change it to add a vanilla bean.

Summary

  • Prep Time: 10 min
  • Cook Time: 15-20 min “chill time” in maker
  • Other: 2 hrs (chill mixture) + 4 hours (firm up ice cream before eating)
  • Total Time: 6 hr 30 min
  • Servings: 9
  • Yield: 4.5 cups

Ingredients

  • 1 cup whole milk
  • 3⁄4 cup granulated sugar
  • pinch salt
  • 2 cups heavy cream
  • 1 tablespoon pure vanilla extract
  • 1 vanilla bean

Directions

  1. Split vanilla bean and scrap out seeds. Place in small sauce pan along with milk and bean pod. Bring to simmer (185 F) then remove from heat and allow to cool to room temperature. Discard bean pod.
  2. In a medium bowl, use a hand mixer on low speed or whisk to combine the milk, sugar and salt until the sugar is dissolved. Stir in the heavy cream and vanilla. Cover and refrigerate 1 to 2 hours, or overnight.
  3. Turn on the Cuisinart® ice cream maker; pour the mixture into the frozen freezer bowl and let mix until thickened, about 15 to 20 minutes. The ice cream will have a soft, creamy texture. If a firmer consistency is desired, transfer the ice cream to an airtight container and place in freezer for about 2 hours. Remove from freezer about 15 minutes before serving.

Adjustments

  • Added vanilla bean for more vanilla flavor
  • Recipe says this makes 10 cups but I found it to make less than the other recipes I’ve used of theirs by about 10%. May be there are just fewer ingredients.

History

  • 2024-02-16 – Turned out great. Very full vanilla flavor and you see the little vanilla seeds mixed within the ice cream which makes it look a bit more authentic.
